Carrot cupcakes (Mmm!)

This time, it’s carrot cupcakes for the kids. Today’s Thursday and we’re going to make carrot cupcakes for the kids tomorrow. We started today because….well, you have to read this entry to learn why.

Now, we started today because we do not want to hurry tomorrow to be on time. We started baking after I made a pie similar to a crema de fruta cake. It has the custard filling and the fruits. But I used a pie crust instead of a cake. When I put the pie into the freezer, Mom asked me if I am done making the dessert. “Yes.”,I said. “Okay. Could you help us bake carrot cupcakes for the kids tomorrow? I wanted to start today because I don’t want to rush tomorrow.” “Okay”,I said. Mom took out her notebook with the carrot cupcake recipe in it.↓

Carrot cupcakes recipe

  • 4 eggs
  • 3/4 cups vegetable oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans (optional)


  1.  Preheat the oven to 350 °F.
  2. Beat eggs, oil, white sugar and vanilla in a bowl.
  3. Mix in flour, baking soda, baking powder, salt, and cinnamon.
  4. Stir in carrots and pecans.
  5. Put some of the mixture into cupcake cups and put them in the oven.
  6. Bake for 20 minutes, or until a knife inserted through one cupcake comes out clean.

We followed as the recipe says, making sure we multiplied the whole recipe x 3 for all the kids. We baked them until the evening, because that’s a lot of cupcakes.

We baked the cupcakes yesterday, didn’t we? Yes, we did. Today we are going to pack the cupcakes and bring them to the school.

Me, putting cupcakes in brown paper bagsIt was raining. I woke up from an afternoon nap to take a bath and get ready. Mom came out of the room when I finished dressing juice packs Mom said I can pack the cupcakes now. So I went to the refrigerator and took out the three pans with the carrot cupcakes on them. Then I took the brown paper bags and set them on the dining table. Mom went to the dining table and said “If you are going to put one big cupcake in a bag, only put one. If you are going to put a small cupcake in one paper bag, put another one because we only have 40 orange juice packs to give.” We are also going to give orange juice, too. Then Eco and Zia went out of the room. Mom said, “Wear you clothes first, so when we are finished with the cupcakes, we are ready to go.” So they went back to the room and dressed up. When Eco, Zia, and Ithey came out again, Zia helped with the cupcakes and Eco packed the juice. Eco took the juice out of the freezer and began to pack them. When he put the lastThe kids and their teacher juice pack inside the box, he found that it was frozen. “Mom, this one is frozen.” ,he said. And he showed her the frozen juice pack. “Don’t worry.” ,she said. “Put it inside the box. It will melt along the way.” We finished packing, and Mom counted 40 brown bags. She put them in a cooler and we each brought an umbrella to get to the car. When we are inside the car, the driver drove to the school. When we got there, Mom got out of the car and told us to stay inside. She went to the principal to talk to her. After awhile, she went back to the car and told the driver to drive toward a covered court. So when we are going to feed the kids, they don’t have to get wet. When we got there, a classEco, Zia, and I of 40 kids ran to the court and lined up, according to the instructions of the teacher. Then Eco and I gave out the juice and Zia gave out the cupcakes. Oz wasn’t there because he was sick at home. So I also had to give out cupcakes to the kids. Then when we were done, we sawUs, giving out food and drinks. (healthy!) that we do not have enough cupcakes and juice! We saw two kids with cupcakes only and two kids with juice. The driver said that two kids (who aren’t from the class) lined up and got some food and ran before anyone noticed. “Oh well, maybe we can give some juice and cupcakes to these kids next time.” ,said the teacher. “Maybe.” ,Mom said. Then we climbed back in the car and we drove home. Some of us are a little wet, but fine. 😀
