Carrot cupcakes recipe

You’ll need:

  • 4 eggs
  • 3/4 cups vegetable oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 3 cups grated carrots
  • 1 cup chopped pecans (optional)

Directions:

  1. Preheat the oven to 350 °F.
  2. Beat eggs, oil, white sugar and vanilla in a bowl.
  3. Mix in flour, baking soda, baking powder, salt, and cinnamon.
  4. Stir in carrots and pecans.
  5. Put some of the mixture into cupcake cups and put them in the oven.
  6. Bake for 20 minutes, or until a knife inserted through one cupcake comes out clean.
